PreGel Vegan Base (Rice Milk Powder Base)



        PreGel Vegan Base SOP

Customers have liked this rice milk base because the flavor is neutral, this base blends well with Sub Zero flavors, and is a shelf-stable product before mixing.

PreGel Base Vegan - 3 oz

Sugar - 4 oz

Water (Boiling Water) - 18 oz

Instructions:

  1.  In a blender, measure and mix vegan base with sugar.

  2. Add boiling/hot water to the vegan and sugar mix in the blender.

    1. All the water does not need to be boiling hot.

    2. Add the boiling water from a kettle or Keurig machine. Use the max amount of boiling water that you can get from the machine.

    3. If all water is not boiling, add cooler water after blending and dissolving the base and sugar with the boiling water.

  3. Blend water with a mix of vegan base and sugar until smooth. 

    1. Blend until mixture has no clumps.

    2. Don’t overmix it and create excessive froth.

  4. Use immediately or store in the refrigerator for up to 14 days. The base will separate during storage, stir/shake to remix before freezing.

  5. Smaller batches can be made by reducing the recipe above accordingly.

  6. You can offer to add vegan marshmallow creme topping to the base.

  7. Add flavors and mix-ins per customer’s request.

  8. Freeze using the same procedure as other bases.
