Keto Nitrogen Ice Cream Standard Operating Procedure
Keto Ice Cream is frozen the same way as any other Sub Zero Nitrogen ice cream. The ingredients are just catered to the special Keto diet. The keto diet encourages a very low amount of net carbs (grams of total carbs - grams of fiber = grams of net carbs) and a higher fat content.
As with all Sub Zero products, primary importance is the prevention of food contamination through food safety protocol. The selected products, equipment, and procedures for the preparation and serving of nitrogen ice cream were designed to prevent contamination during preparation and serving of the product.

Skinny Syrups brand Sugar Free Flavors (It is recommended that you separate these flavors and mark them differently, so they are not used accidentally.)

Keto Ice Cream can be offered in all sizes and doesn’t need to be a premade mix. The ratio is 1 part almond milk: 2 parts heavy cream. Almond milk is lower in carbs and calories and the heavy cream is high in fat. The combination of heavy cream and almond milk, creates a better texture with a good taste.
The customer can choose any ratio that they like. Some prefer just heavy whipping cream, others more almond milk. I would make it as specified in this SOP with the (1:2 ratio), unless otherwise requested. The nutrition facts are based on this standard ratio.
We have formulated this Keto recipe and SOP to reduce employee error and food waste. By adding all the sweetener to the Keto flavors, we solve a few problems:
Employees don’t have to measure drops with liquid stevia.
We don’t have to worry about other sweeteners or fillers that get added to stevia in the powder form that are restricted on the Keto diet.
Please print out the printable procedure below, then laminate or use a sheet protector, and post in the food preparation area as a quick and easy reference for employees.
When a customer asks about Keto options:
Let them know that we have several options since they can choose their Keto flavors and mixins. If they ask about the base, tell them that it is a combination of mostly heavy cream with some unsweetened almond milk. You can adjust the amounts of each based on their diet preference, if they request it.
Let them know that there is an upcharge for the Keto ice cream.
Ask them what size they want. You will mix the base right in the mixing bowl.
Remember: The Keto flavors are different than our regular flavors. These Keto flavors are also diabetic friendly - there is NO sugar in the flavors.
Grab mixing bowl, liquid measuring cup, almond milk, and heavy cream.
Measure specified heavy cream amount. Add specified almond milk amount to make total ounces needed for size ordered.
Pour mixed base into mixing bowl.
Add requested Keto flavors and mixins in the same amounts as standard recipes.
Freeze with nitrogen according to standard procedure. It will freeze faster due to the higher fat content. Be cautious to not over-freeze the ice cream to ensure a good ice cream texture.
