Waffle Bowl Standard Operating Procedure 

Introduction 

Waffle bowls are freshly made pastries with a similar texture to a waffle or wafer. This popular product allows for ice cream to be beautifully displayed inside our waffle bowl, and for customers to enjoy the delicious creation and ice cream experience. This SOP for the fun and crispy Waffle Bowl follows Sub Zero safety standards for all products made in the store. Strict adherence to product, equipment, procedures, and training are required for authorization to sell this product. 

Safety 

As with all Sub Zero products, primary importance is the prevention of food contamination through food safety protocol. The selected products, equipment, and procedures for the preparation and serving of waffle bowls were designed to prevent contamination during preparation and serving of the product. 

Ingredients 

1 (5lb) bag of Krusteaz Professional Waffle Cone mix 

1 mix-in scoop of cinnamon 

3 oz of vanilla flavor 

4 2/3 cups of water

Procedure 

Turn on waffle cone iron and allow it to heat up to temperature. 

Pour waffle cone mix into 8qt freezing/mixing bowl. 

Add in water and vanilla flavoring. Carefully whisk ingredients together. Once the waffle cone iron is ready, spray release spray on both sides of the waffle iron where the batter will be placed. 

Pour 1 ice cream scoop of batter onto the waffle iron. 

Close the waffle iron. Set and start the timer for 45 seconds. 

When the timer is done, open the iron to retrieve the newly made waffle.

Use tongs to quickly pick up the waffle before it cools and hardens. Place the waffle inside the regular or large cup (depending on the size of ice cream 

they ordered) and form the waffle bowl as depicted in the picture above. Place a clean cup inside the waffle bowl to flatten the bottom fold and create a more clear shape. 

Place waffle bowls in your display case for customers to view and order. Pour excess waffle cone mix into a food storage container. Label container with the item’s name and the date it was prepared. Store in fridge. 

Additional Notes: 

1. If your store is in a humid climate, store your waffle bowls in an airtight container and display case to retain their crispiness. 

2. Prepare your waffle bowls daily. Store any extras apart from the display case in an airtight container for later use in the day during busier times.
