OREO Ice Cream Sandwich SOP

Introduction

This new item can be easily added to your menu with minimal prep work. The OREO wafers are shelf-stable and require no baking. OREO wafers come in 2.5” or 3” diameter size. You can decide which you prefer or use the one that your distributor carries in stock.

Helpful hint: OREO is required to be spelled in all caps according to their branding guide. Any display or menu board should have OREO written properly in caps.

Procedure

Ordering from Your Food Distributor:

·         Call your supplier/distributor and find out if they carry the OREO wafers and in which size. The 2.5" OREO Wafer Info Sheet and the 3" OREO Wafer Info Sheet that your supplier may want are linked here for you to download and send to them.

·         Ask them if they carry either of these in stock. If they do, go with that size. If they don’t carry either on hand, they will be able to bring either size in for you but lead time will increase.

·         Find out the lead time on ordering and ask them for their best pricing.

Display in Store:

·         Having them out in front of customers will increase sales, especially if you put them at the front of the ordering line.

·         Graphics and collateral just for the OREO sandwiches has been designed and is available on the Print Store for use.

·         The cookies can be displayed in a display case along with your waffle bowls without the ice cream in them. The customer can choose their ice cream and you can create the sandwich.

·         The ice cream sandwiches can also be premade, packaged in clear packaging, and stored in a display freezer (if you have one). This makes it easy for customers to quickly grab.

Assembling Ice Cream Sandwiches:

·         Customers will order the flavor of ice cream that they desire to go with their OREO wafers.

·         Make and freeze ice cream as normal, it must be frozen to a stiff but scooping consistency. The ice cream can’t be too soft or frozen too hard (where it becomes crumbly and impossible to scoop).

·         Use gloves when handling the wafers and sandwiches.

·         For the 2.5” wafer size, scoop two ounces of ice cream on one 2.5” wafer. Place the other wafer on top and carefully push in the middle of both cookies to gently  “smoosh” the ice cream evenly to the edges without breaking the wafers. 

·         For the 3” wafer size, scoop a mounded 2 oz scoop of ice cream for each sandwich. Assemble same as above.

·         Serve in a wax paper bag or sheet. The wax paper is inexpensive and a logo sticker can be added.

Pricing:

·         Price it out at around the typical 25-30% food cost.

·         You can sell the cookies in groups or singles.
